Banana Rama

I’ve decided this week will be totally devoted to quick, easy, healthy breakfast options– why not, considering we need to start somewhere and your day’s fuel SHOULD begin with breakfast!

As I write, our house is filling with sweet smells of delicious, whole food banana bread! The recipe was passed from a dear friend who’s a Crossfit enthusiast and has a young child as well who LOVES this stuff as much as my own little one.  Another plus is all the ingredients for this deliciousness are simply added and blended right into the blender or food processor! So easy even I can do it!
Your ingredients are simple but it always helps me to have everything on hand and out so I can work that much more efficiently.  The recipe comes from Civilized Caveman Cooking and follows the Paleo/grain free/gluten-free protocol for those of you who care 😀

You’ll blend the first four ingredients (all the way through whatever butter you decide upon) and depending on how awesome your blender is, you may need to scrape the sides with a rubber spatula as you go.

Then add the rest of the ingredients, pour into a 9×9 pan or a loaf pan as the original source suggests, and bake at 350 for anywhere from 45-60 mins. I’ve found my oven baked fast so mine is usually done within 45 mins.

There are so many variations to this masterpiece allowing for options beyond breakfast or for a quick, easy snack.

I’m telling you… You will LOVE this! Leave a comment if you decide to change it up!

Enjoy!
